‘Dementia prevention’ Peanuts can cause cancer if eaten incorrectly

Sandwiches with peanut butter are often eaten by elementary school students in the United States, but peanut butter is one of the most frequently recalled foods. In 2009, peanut butter made by the same manufacturer as the recalled product caused more than 700 cases and 9 deaths in the United States alone.

However, peanuts are a typical high-fat, high-protein food that can provide the caloric content of a bowl of rice even if you eat just a handful. It contains about 45% lipid, 25% protein, and 26% carbohydrate, as well as 13 kinds of vitamins and 26 kinds of minerals.

Although there are many lipids (fat), 87% are unsaturated fatty acids that are beneficial to blood vessels, such as oleic acid and linoleic acid, so they reduce cholesterol and help prevent arteriosclerosis. Peanuts are also rich in luteolin, a flavonoid component that helps regulate blood sugar, which is good for preventing and improving metabolic syndrome. Peanuts are particularly rich in this ingredient.

Peanuts contain a large amount of B vitamins, amino acids, and lecithin, which provide energy to the brain, and play an important role in the construction of the brain’s nervous tissue and activation of the brain. It helps to improve memory and concentration, as well as to prevent dementia.

Antioxidants such as tocopherol and phytosterol, which are abundant in peanuts, and vitamin E prevent aging, and niacin helps relieve hangovers. Abundant dietary fiber of 8.5g per 100g is effective in preventing constipation. However, if peanuts are stored incorrectly and mold develops, aflatoxin, a powerful carcinogen, is formed, so caution is required. Aflatoxins occur when mold grows in foods high in starch, such as peanuts, corn, and soybeans. Aflatoxin is one of the most potent carcinogens discovered to date, and is known to cause liver cancer in particular.

It is almost impossible to eliminate aflatoxins present in food. This is because it does not die even when heated to a high temperature of 200 degrees Celsius or more. If possible, do not eat old nuts or dried fruits, and never eat peanuts if they smell old or moldy.
