Jeongwol Daeboreum “namul food recipe Baek Jong-win” released

On the occasion of Jeongwol Daeboreum, five-grain rice and seasoned vegetable recipes are released and attract attention.

Baek Jong-won, a culinary researcher and broadcaster, has not released any food recipes specifically for Jeongwol Daeboreum, but has compiled a collection of various vegetable food recipes through public broadcasting and YouTube.

First of all, fern greens require soaked fern, green onion, rice water, flower salt, minced garlic, sugar, sesame salt, perilla oil, and soy sauce for soup.
After washing the soaked fern to remove the water, cut it into 6-7cm pieces. Fry the green onion in perilla oil, and stir-fry minced garlic and fern. If perilla oil is not available, add sesame oil or cooking oil and stir-fry. Add rice water and a little sugar and boil. Then add the soup soy sauce and kosher salt and simmer until the moisture is gone.

Seasoning bellflower is not easy because of its bitter taste. To prepare, you need bellflower root, green onion, sesame oil, kosher salt, minced garlic, rice water, and sesame salt.
For bellflower, the bitter taste of bellflower, bought in the market, should be brewed by soaking it in water. Most of the caraway seeds sold in supermarkets are sold without the bitter taste.

Cut the drained balloon flower into 5cm lengths, and slice the green onion and fry it in sesame oil. Add caraway seeds and stir-fry them with salt, minced garlic, and sesame seeds.

Spinach greens need salt, minced garlic, sesame oil, sesame salt, and soy sauce for soup.
Cut the spinach roots and wash them under running water. After boiling 1 liter of water, add salt, spinach, and blanch for about 30 seconds. After blanching, cool immediately with cold water and drain well. Add garlic and soy sauce soup and mix well while watching the seasoning. You shouldn’t mix it like laundry, and you should mix it with a lot of things. When adding sesame oil, add ground sesame seeds.

Additionally, the recipe for namul hot pot rice was released for leftover namul meals after the holidays.

You can cut the greens into small pieces according to type and freeze them in the form of patties. If necessary, thaw and eat. First, put sesame oil in a pot, spread the rice evenly over the sesame oil, and put the thawed vegetable patty on top of the rice.
In this state, place the egg in the center and cover it with a lid over low heat.
Since it is a seasoned vegetable, you can season it with sesame oil or soy sauce and eat it. You can add red pepper paste to your taste and mix. In addition, you can eat it with seaweed powder.
