Slightly bruised fruit is still usable, but softening fruit can ferment, degrading flavor and shortening shelf life. Rotten and moldy apples must be rejected entirely. The opinion still prevails that after removing the visible layer of mold, the product can be eaten. Definitely not. It is even dangerous,
the VMVT emphasizes, noting that mold roots can penetrate deeper than visible surfaces and produce harmful mycotoxins.
Storage Guidelines for Home-Pressed Juice
Proper storage dictates how long pressed juice remains consumable. The VMVT recommends pasteurizing batches intended for long-term storage, which extends shelf life up to one year. Once opened, pasteurized packaging must be kept refrigerated and consumed within three to five days. Unpasteurized juice should be consumed within 48 hours.
