Bistro Guillaume Perth Closing: French Fine Dining Staple to Shut After 14 Years

After fourteen years of bringing a taste of classic French bistronomy to Western Australia, Bistro Guillaume in Perth is set to close its doors on April 4th. The announcement, made by Crown Perth via Facebook, marks the end of an era for the popular fine-dining establishment.

Opened in 2012 by acclaimed chef Guillaume Brahimi, Bistro Guillaume quickly became a cornerstone of the Crown Perth’s dining scene. The restaurant has served “tens of thousands of guests” according to Crown Perth’s statement, offering a menu rooted in traditional French cuisine. Brahimi, also Crown’s culinary ambassador, expressed his gratitude for the support received over the years.

“I am incredibly proud of what we have achieved here over the past 14 years,” Brahimi said. “I want to sincerely thank every person who has dined with us over the years. Cooking and sharing food are what make me happy, and by dining at Bistro Guillaume Perth, you have allowed me to do that. It has been an honour to share my love of French cooking with the Perth community, alongside the many chefs and team members who have worked in the venue since 2012.”

The closure follows a broader pattern of shifts within Brahimi’s restaurant portfolio. While the Perth location is closing, Brahimi’s Melbourne Bistro Guillaume will remain open. This isn’t the first time a Guillaume restaurant has faced closure. in 2016, his Paddington, Sydney restaurant shuttered after just two and a half years, attributed to the end of the lease and a desire to focus on other ventures. At that time, Brahimi was also involved in menu development for several other Bistro Moncur and Royal locations.

Crown Perth CEO Brian Pereira acknowledged the restaurant’s success and anticipates a strong turnout for a final dining experience. “14 years is a remarkable length of time for a venue to enjoy such incredible success, and we know We find so many people who will delight in the opportunity to visit Bistro Guillaume one last time,” he stated. Pereira highlighted popular dishes like the Roasted Chicken with Paris Mash, Beef Bourguignon, and Passionfruit Souffle, suggesting these are likely to be in high demand during the remaining weeks.

The closure of Bistro Guillaume isn’t signaling a retreat from diverse dining options at Crown Perth, however. The resort is planning a period of “rotating program of seasonal and innovative popup concepts” while a new, permanent concept is developed. This follows recent additions to the Crown Perth’s hospitality offerings, including Gladstones and the Urban Food District, indicating a broader strategy to appeal to a wider range of palates.

The news has prompted an outpouring of sentiment from Bistro Guillaume’s loyal clientele. Social media is filled with expressions of disappointment and fond memories. Customers reminisced about favorite dishes, praising the consistent quality and memorable dining experiences. One customer described it as their “favourite restaurant,” while another specifically mentioned missing the Roasted Chicken and Paris Mash.

While the closure marks the end of a chapter for Bistro Guillaume Perth, Crown Perth has assured that the staff will be absorbed into other roles within the resort. This provides a degree of stability for the team, mitigating the impact of the restaurant’s closure. Brahimi also expressed gratitude to the staff and suppliers, acknowledging their contributions to the restaurant’s success over the years.

The restaurant’s legacy extends beyond its menu and service. Bistro Guillaume Perth played a role in shaping Perth’s culinary landscape, introducing a sophisticated French dining experience to the city. Its closure represents a loss for those who appreciated its classic charm and refined cuisine, but Crown Perth’s plans for future dining experiences suggest a continued commitment to providing diverse and high-quality options for its guests.
