Le Noailles, a long-standing brasserie in the upscale district of Bordeaux, welcomed diners back on Wednesday, October 21, 2026, following a ten-month closure prompted by a major fire, france3-regions.franceinfo.fr reported. Jeanine, the very first customer seated at Le Noailles on this Wednesday, sat in the veranda before an immaculate tablecloth and impeccable cutlery, noting that her grandparents already used to come and have lunch there. The historic establishment originally opened its doors in 1932 in premises that previously housed a hardware store when the Homar couple decided to install a restaurant, counting Bordeaux academician François Mauriac among its illustrious clients in the 1940s.
Ten Months After the Christmas Week Fire
The restaurant was forced to shut its doors immediately after a fire broke out in the kitchen on December 29, 2025, just days before New Year’s Eve, spreading rapidly throughout the building. Jeanine mentioned that she was supposed to spend New Year’s Eve there last year but that it was not possible. Chef Yassine Saada recounted that the blaze originated from a gas plancha and consumed the kitchen within five minutes, forcing an immediate evacuation of the staff.

Saada stated, according to france3-regions.franceinfo.fr.
Preserving Identical Decor and Traditional Menu Items
For the reopening service, owner and manager Nicolas Cuny sought to preserve the exact character and identity of the institution. Cuny noted that twenty-seven of the twenty-eight original employees returned to their posts, while the physical dining room was restored identically to maintain its visual appeal and the familiar menu.
L’objectif c’était que rien ne change, ni visuellement, ni la carte, ni le personnel,
Cuny explained, as reported by france3-regions.franceinfo.fr.
Patrons returning to the dining room found traditional dishes intact, including oysters, onion soupe, mushroom omelets, confit, lamprey, and the signature entrecôte frites. Behind the scenes, however, renovations upgraded the kitchen to electric equipment and improved working conditions for the staff.
