Brown vs. White Eggs: Nutrition Experts Settle the Debate

Nutrition experts have clarified that the color of an eggshell—whether brown or white—does not affect its nutritional value, resolving a long-standing consumer debate about which type is healthier.

According to registered dietitians Vicki Koenig and Emer Delaney, the difference in shell color is solely due to the breed of the hen laying the egg. White-feathered chickens with white earlobes typically lay white eggs, while hens with red or brown feathers lay brown eggs. This genetic trait determines shell color but has no impact on the egg’s internal composition.

“Nutritionally, brown and white eggs are identical. There is no difference,” said Koenig, a master’s-level registered dietitian at Nutrition-Wise. Delaney, founder of My Private Dietitian, added that brown eggs often carry a higher price tag not because of superior nutrition, but because the breeds that lay them are larger, consume more feed and produce fewer eggs increasing production costs for farmers.

Gastroenterologist Dr. Pal Manickam echoed these findings, calling the belief that brown eggs are healthier a “common food myth.” He emphasized that eggshell color is a genetic trait unrelated to nutrition, freshness, or quality. Instead, factors such as the hen’s diet, living conditions, and farming practices—such as free-range or omega-3-enriched feed—have a far greater influence on the egg’s nutritional profile.

Consumers are advised to look beyond shell color when selecting eggs and consider labels indicating how the hens were raised and what they were fed. For example, eggs labeled as free-range, pasture-raised, or fortified with omega-3s may offer enhanced nutritional benefits compared to conventional eggs, regardless of shell color.
