One of Ireland’s most celebrated chefs, Dan Guerin, has left his position at Cush midleton, a restaurant in County Cork, just eight months after its launch in March 2024.
The Irish Examiner reported the departure on November 29, 2024.

Guerin previously shared the 2023 Georgina Campbell’s Chef of the Year award with fred Desormeaux, Executive Head Chef of Salty Dog and Sea Church, both located in Ballycotton, County Cork.

Shift in Flynn Cush Group leadership

Both Cush Midleton, Cush Ballycotton, salty Dog, and Sea Church are owned by the Flynn Cush Group. Following Guerin’s departure, the group announced that Desormeaux will assume the role of Group Executive Chef,overseeing all four restaurants.

This restructuring indicates a consolidation of culinary leadership within the Flynn Cush Group,placing Desormeaux at the helm of all their dining establishments.

While leading the kitchen at Cush Ballycotton in 2022, Guerin received a “Highly commended” recognition in the Food & Wine Young Chef of the Year category.
He also earned a Michelin Bib Gourmand for Cush Ballycotton in 2022, a distinction recognizing high-quality, good-value cooking.

The Bib Gourmand award created expectations that Cush Midleton would achieve similar recognition, highlighting the meaning of Guerin’s departure in relation to the restaurant’s future culinary standing.

Positive Review Preceded departure

A review of Cush Midleton published in June 2024 by the irish Examiner described the restaurant as bustling with diners enjoying a particularly noteworthy dining experience. This positive assessment underscores the potential impact of Guerin’s departure on the restaurant’s continued success.
