Ingredients
For the cake:
- 100g plain flour
- 2 tsp baking powder
- 75g ground almonds
- 175g butter, room temperature
- 175g brown sugar
- 1 tsp five spice mix
- Pinch of salt
- 3 eggs, beaten
For the topping:
- 3 apples
- 15g butter, melted
- 25g sugar
Method
- Preheat the oven to 160°C.
- Butter the sides and line the base of a 24cm springform tin.
- Sieve the flour and baking powder. Add the ground almonds.
- In a bowl, beat the butter, brown sugar, five spice mix, and salt until light and fluffy.
- Add the eggs one at a time, mixing in a tablespoon of the flour mix after each addition. Gently fold in the remaining flour mix.
- Transfer the batter to the prepared tin.
- Peel, core, and slice the apples into thirds. Arrange them in overlapping circles on top of the cake batter.
- Brush the apples with melted butter and sprinkle with sugar.
- Bake for about 50 minutes, or until the cake’s sides pull away from the tin and the apples become golden.
- Let the cake cool on a wire rack for 15 minutes.
- Use a knife to loosen the sides of the cake before turning it out. Serve at room temperature with thick creamy yogurt.
