Canapé, a type of hors d’oeuvre dish, originated from the French word for sofa. The appearance of the ingredients on top of the bread resembles a person sitting on a sofa. This dish allows you to change the toppings to your liking, making it similar to hand-rolled sushi in Japan.
This time, we made canapé using mainly ingredients from Hachinohe, herbs grown by Mr. Tsukui, and parsnip, a vegetable that looks like a white carrot. We will introduce three types of recipes.
Recipe 1: Aomori Prefecture Beef x Bread with Dried Fruits and Nuts

Ingredients:
- Beef thighs
- Nukazuka cucumbers
- Parsnips
- Rhubarb jam
Instructions:
- Sprinkle salt and pepper on the beef thighs.
- Grill the beef thighs until the meat is well browned on all sides.
- When the meat is finished cooking, remove it from the frying pan and wrap it in aluminum foil to prevent the meat juices from leaking (you can adjust the degree of cooking to your preference).
- Roast the nukazuka cucumbers sprinkled with salt.
- Boil and mash parsnips (potatoes can be substituted) and season with salt and pepper.
- Slice the finished roast beef into thin slices, top with Nukazuka cucumbers and parsnips, and top with rhubarb jam (strawberry jam can be substituted).
Recipe 2: Hachinohe Vegetables x Plain Bread
Ingredients:
- Nukazuka cucumber
- Paprika
- Tomato
- Lemon basil
- Olive oil
- Salt
- Pepper
- Vinegar
Instructions:
- Cut the Nukazuka cucumber, paprika, tomato, and lemon basil into easy-to-eat pieces.
- Mix olive oil, salt, pepper, and vinegar to make dressing.
- Place the dressing and vegetables on the bread.
Recipe 3: Sardines from Hachinohe x Bread with Fennel
Ingredients:
- Sardines
- Fennel
- Mayonnaise
- Egg yolk
- Olive oil
Instructions:
- Sprinkle spices (paprika, black pepper, parsley) and flour on three pieces of grated sardines, add sliced garlic and sauté.
- Thinly slice the fennel stalks
- Place the sautéed sardines and cut fennel on the bread and pour the sauce over it.
Sauce: Mayonnaise, egg yolk, olive oil
PAIN (Bread) Making Experience Class Using Agricultural Products
This is a class for making bread that uses vegetables and goes well with wine. Participants can create their own original recipes with the instructor and experience “making bread in a short amount of time.” In addition, there is also a “beginner course” in which the organizer prepares the ingredients and all participants make the same bread.
