November 13, 2024 Catherine Williams - Chief Editor World

A Shared Cultural Heritage Between the Philippines and Indonesia Through Gastro-Diplomacy

To celebrate the 75th anniversary of diplomatic relations between the Philippines and Indonesia, Seasonal Tastes at The Westin Jakarta will host the Pagana: Philippine Food Festival. This event showcases the rich flavors of Mindanao cuisine, curated by Chef Datu Shariff Pendatun.

The festival runs from November 11 to 17, 2024, offering a buffet dinner featuring traditional Mindanao dishes, which share similarities with some Indonesian dishes. Starters include Pindilutanan a Sagutong (grilled eggplant with coconut cream) and Liyawal Istah (raw fish macédoine with green mango). Main courses include Tiyulah Itum (beef in burnt coconut broth), Riyandang a Sapi (slow-simmered beef in coconut milk), Piyaparan a Manok (savory chicken with sautéed coconut), and Sinigapuna (fragrant rice with turmeric and lemongrass). Desserts feature Tapay (fermented cassava) and Sindul (banana, dumplings, durian, and root crops in coconut milk). The dining experience costs Rp588,000++ per person on weekdays and Rp608,000++ on weekends.

Chef Datu Shariff Pendatun aims to highlight Southeast Asia’s interconnected cultures through food. He is known for promoting Muslim Mindanao cuisine and has participated in initiatives like Dulang in Jakarta, sharing traditional dishes and cultural insights.

The term Pagana, from the Maranao people of Mindanao, means ‘feast,’ traditionally celebrated during significant events. This aligns with the Department of Tourism’s Colours of Mindanao campaign, welcoming visitors through food and culture.
