Echire Maison du Bourg opened in 2009 in Marunouchi, Tokyo Station as the world’s first Echire butter specialty store. Although there are now many shops that focus on butter as an ingredient, back then it was still a rarity. They sell croissants that bring out the deep flavor of fermented butter and butter cakes that look beautiful, and have become a spot that has people waiting in line day after day.
What I would like to take this opportunity to check out is “Financier Echire,” which has been particularly popular since its opening. This famous baked confectionery is made with a dough made from Spanish Marcona almond powder and French wheat flour, and is thoroughly baked with a distinct aroma of burnt butter.
This financier has been upgraded in recipe, appearance, and size. The brand’s symbol, the letter “É”, stands out as it pursues the ideal contrast between the “crispy texture on the outside” and the “soft buttery texture on the inside.” Irresistible for fans!
