Elderberry Juice May Aid Weight Loss, Boost Metabolism
Updated June 15, 2025
Drinking elderberry juice could be a valuable addition to weight management strategies, according to a recent study led by Washington State University. The research, published in Nutrients, indicates that consuming 12 ounces of elderberry juice daily for one week can positively alter the gut microbiome, improve glucose tolerance, and enhance fat oxidation.
Elderberry, a dark purple berry native to Europe, is often used to boost immune function. however, Patrick Solverson, assistant professor at WSU’s Elson S. Floyd College of Medicine, noted that its other health benefits are frequently enough overlooked. “Elderberry is an underappreciated berry, commercially and nutritionally,” Solverson said. “We’re now starting to recognize its value for human health, and the results are very exciting.”
In a clinical trial, researchers examined the effects of elderberry on metabolic health. Eighteen overweight adults participated in a randomized,placebo-controlled study. Participants consumed either elderberry juice or a specially designed placebo, while maintaining a standardized diet. the Food Innovation Lab at North Carolina State University created the placebo to match the color and taste of the juice.
The study revealed that participants who drank elderberry juice experienced notable increases in beneficial gut bacteria, such as firmicutes and actinobacteria, and decreases in harmful bacteria, including bacteroidetes. A healthy gut microbiome is crucial for nutrient absorption and overall physical and mental well-being.
Beyond gut health, the elderberry intervention also improved metabolism. Participants saw an average 24% reduction in blood glucose levels, indicating better sugar processing after carbohydrate consumption. Insulin levels also decreased by 9%.
The research also suggested that elderberry juice can enhance the body’s ability to burn fat. Participants who consumed the juice showed increased fat oxidation after a high-carbohydrate meal and during exercise.
Researchers attribute these benefits to the high concentration of anthocyanins in elderberries. Anthocyanins are plant-based compounds known for their anti-inflammatory, anti-diabetic, and antimicrobial properties.
“Food is medicine, and science is catching up to that popular wisdom,” Solverson said. “This study contributes to a growing body of evidence that elderberry, wich has been used as a folk remedy for centuries, has numerous benefits for metabolic as well as prebiotic health.”
Solverson noted that while other berries contain anthocyanins, elderberries have a particularly high concentration. He estimated that a person would need to consume four cups of blackberries to get the same anthocyanin dose found in 6 ounces of elderberry juice.
Although elderberry products are more popular in Europe, demand in the U.S. surged during the COVID-19 pandemic, and the market continues to grow.
What’s next
the researchers have filed for a provisional patent to explore using the bioactive components of American black elderberry for weight management and gut health through supplements or other applications. this could lead to new products aimed at improving metabolic health and aiding in weight loss.
