According to the Hotel– and Gaststättenverband (Dehoga) Schleswig-Holstein, restaurant owners in the northern German state are reporting strong summer season results as consumer spending habits shift. Roughly 66 percent of hospitality businesses surveyed in an internal Dehoga poll of 100 establishments report being satisfied or very satisfied with their summer turnover, driven by favorable weather conditions and an increase in discretionary spending. Amrum Touristik reported a 95 percent occupancy rate on the North Sea island of Amrum in the Nordfriesland district, according to regional data. Meanwhile, the Ostseefjord Schlei GmbH recorded over 85 percent capacity across the Schleiregion in the Schleswig-Flensburg district. Weather played a significant role in drawing crowds to local establishments, particularly during sustained sunny spells in July. Those conditions filled outdoor terraces and beer gardens across the region, sustaining steady customer traffic for local operators as the summer season wound down.

Consumers Spend More on Extras

A notable shift in consumer behavior underpins the positive financial results. According to Dehoga President Lutz Frank, money is once again flowing more freely among many patrons.

Operators note that customers are increasingly ordering additional items that were previously trimmed from tighter household budgets. Diners are regularly adding a dessert or a second drink to their meals, reflecting a willingness to spend more on dining out.

Rising Operational Costs and Wage Pressures

Despite the boost in customer spending and turnover, the hospitality sector faces ongoing financial pressures from rising operational expenses. Dehoga Schleswig-Holstein reports that approximately one in five businesses in the state is currently considering menu price increases to offset these growing costs. The union representing hospitality workers is demanding higher wages for employees in Schleswig-Holstein, though employers have yet to table a formal counteroffer, according to regional reporting.
