Weston’s early career began in the world of fashion as a triumphant model in the 1950s, working both in Ireland and internationally. A chance encounter – her image on a billboard – led to her introduction to Galen Weston, whom she married in 1966. This marked the beginning of a remarkable partnership that would reshape the retail industry.
Initially, the couple settled in Ireland, but in 1971 they relocated to Toronto, Canada, where Weston later became a citizen. While her husband focused on establishing and expanding supermarket chains like Power and Quinnsworth (later sold to Tesco), Hilary Weston increasingly took on a pivotal role in developing the family’s retail interests. She was especially involved in the early days of Penneys, the discount fashion retailer founded in 1969 as a house brand for Associated British Foods (ABF).
