- 1 fennel bulb, cored and sliced
- 10 small red potatoes, thinly sliced
- ½ bag shishito peppers, stems removed
- 1 lemon, quartered

Instructions:
- Preheat oven to 400°F (200°C).
- In a baking sheet lined with aluminum foil, combine sliced fennel bulbs, sliced potatoes, stemmed shishito peppers, and lemon slices. Drizzle with 2 tablespoons of olive oil and sprinkle with 1/2 teaspoon salt and 1/2 teaspoon Cuban citrus garlic seasoning. Remove the peppers from the baking sheet temporarily and mix in the remaining ingredients.
- Pat the salmon dry, coat each fillet with 1.5 teaspoons olive oil, a pinch of salt, and 1/2 teaspoon Cuban Citrus Garlic Seasoning, and place in the center of the baking sheet.
- Bake for 15 minutes, then add the peppers to the baking sheet. After about 5 minutes, or when the peppers begin to blister, use an instant-read thermometer to test the salmon temperature. When the internal temperature of the salmon reaches 145°F (63°C), remove the baking sheet from the oven.
