Delicious ⁤and Healthy Trader Joe’s Recipe: Baked Salmon ⁣with Roasted Vegetables

Ingredients:

  • TJ’s BBQ Fresh Atlantic Salmon (1 pack, 2 pieces)
  • 3 tablespoons olive oil
  • ¾ teaspoon ​sea salt
  • 1 ½ teaspoons ​TJ’s Cuban Citrus Garlic Seasoning
  • 1 fennel bulb, cored and sliced
  • 10‌ small red potatoes, thinly ⁢sliced
  • ½ bag ​shishito peppers, stems removed
  • 1 lemon, quartered
  • TJ’s Chimichurri Sauce, for dipping sauce

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. In a baking sheet lined with⁣ aluminum foil, combine sliced fennel bulbs, ‌sliced potatoes, stemmed shishito peppers, and lemon slices. Drizzle with 2 tablespoons ⁤of olive oil and ​sprinkle with 1/2 teaspoon salt​ and ⁢1/2 teaspoon ⁢Cuban citrus garlic seasoning. Remove the peppers from the baking⁢ sheet temporarily and mix in the remaining⁤ ingredients.
  3. Pat the salmon dry, coat each⁤ fillet with‍ 1.5 teaspoons ‌olive‍ oil, a ‍pinch of salt, ⁤and 1/2 teaspoon Cuban Citrus Garlic Seasoning, and place in the center of the baking sheet.
  4. Bake for 15 minutes, then ⁣add the peppers to ⁢the baking sheet. After about 5 minutes, or when‌ the ⁤peppers ‌begin to blister, use ⁤an instant-read thermometer ⁣to test the salmon temperature. When the internal temperature of the salmon reaches ⁢145°F (63°C), remove the baking ‌sheet​ from ‍the oven.
