San Antonio Chef Jason Dady Launches CrawDady Crawfish Pop-Up
San Antonio chef Jason Dady is expanding his culinary footprint with the launch of CrawDady, a new crawfish pop-up at The Rock at La Cantera. The concept, serving made-to-order boils with a variety of flavor profiles, officially kicks off on .
Located at Frost Plaza, CrawDady will operate Fridays from to , Saturdays from to , and Sundays from to throughout the spring season.
Guests can choose from four distinct boil flavors: Dry Cajun, featuring a signature spice blend; Wet Cajun, made with butter, Frank’s Red Hot, and a house spice mix; Viet-Cajun, incorporating ginger, lemongrass, and “Funky Butter”; and Italian Garlic Herb. The menu also features shareable sides designed to complement the crawfish, including boudin balls with grain mustard remoulade, boudin sausage links, and jalapeño-white cheddar hushpuppies topped with Kewpie mayo and lime. Chicken and sausage gumbo served over bay leaf rice will also be available, offering a heartier option.
The opening day celebration on will begin at and include live music from Aaron Montano-Teague. A watch party for the San Antonio Spurs versus Sacramento Kings game is scheduled for . Dady’s other concepts at The Rock – Lil’ Bros BBQ Shack, Ice Ice Dady, and Roca & Martillo – will also participate, offering treats to attendees. Entry and parking are free.
CrawDady represents the latest addition to Dady’s growing portfolio of restaurants and pop-up concepts. In 2025, he opened Lil’ Bros BBQ Shack and Ice Ice Dady. He also revitalized his Umai Mi concept, transforming it into a quick-service stand at Pearl’s Bottling Department food hall. Looking ahead, Dady is preparing to debut Mexico Ceaty in April, a project that will reimagine the food court inside downtown’s Shops at Rivercenter with four new dining experiences: Mexican restaurant Tres Arcos, 300-seat bar Dos Cantinas, speakeasy-style agave tasting room El Último, and panadería Dulce Aroma.
According to those familiar with Dady’s work, his ability to juggle multiple culinary ventures is noteworthy. The CrawDady pop-up adds another layer to the vibrant food and entertainment scene at The Rock at La Cantera.
