A Reputation Reconsidered

Perfect canteen, founded in 2009 by chef filip Sajler, has become a notable presence in Prague’s dining scene, serving not only the public but also catering to clients like the state enterprise management of the Czech Republic. Despite its established name – Sajler is known from appearances on programs like Kuci in Action – the canteen chain consistently receives lukewarm online reviews, averaging below 4/5 stars across its locations, including Churchill square, Brumlovka (Moneta), Plaza, and Gemini na Pankrác.A recent visit to the Gemini na Pankrác location revealed a score of just 3.7/5 on Google as of August 21, 2025. However, a firsthand experience suggests a different story.
Trend Tracking and Customer feedback
Filip Sajler acknowledges the lower Google ratings but emphasizes that his team prioritizes tracking trends in feedback rather than fixating on absolute scores. “It is not so crucial to us the absolute level of the sign on Google, rather to watch the trend,” Sajler explained. Each Perfect Canteen location features a “feedback wall” where customers can provide direct comments, which are carefully reviewed by chefs and managers. During our visit, the Gemini location was approximately half-full, a typical occurrence during the slower summer months when many patrons are away from business centers.
Sajler anticipates a return to full capacity in September and hinted at upcoming new projects designed to further enhance the dining experience.
Perfect Canteen offers a daily menu of soup and a selection of “three cash” (main course with sides), alongside a pasta bar. Our tasting of carbonara (209 crowns) and Bolognese (199 crowns) proved satisfying, with a wait time of around ten minutes. The ”cash” options, including a Stir Fry of chicken thighs with crispy vegetables and jasmine rice (169 crowns) and Čevapčič, were also well-prepared. Based on this experience, a rating below 4/5 seems undeserved; in fact, the quality warrants a higher score.
The menu also includes classic fried dishes like cheese and steaks, which were not sampled during this visit. Sajler explained that each location’s chef tailors the daily menu to local preferences, building upon a foundation of popular dishes and seasonal ingredients.”we have a fancy style of serving, tuned Perfect recipe, and we have items that are the same in the canteen and are such a fixed menu and change according to the season.”
Prioritizing Hospitality: Water and Staffing
Beyond food quality, Perfect Canteen distinguishes itself by offering complimentary water – a practice not universally adopted by restaurants and pubs. Sajler firmly believes in prioritizing customer comfort and satisfaction. “We want first of all to be happy and return to us. I don’t think we’re depriving us about profit, many customers may take a glass of water and our homemade lemonade.”
Sajler is directly involved in staffing decisions, personally selecting and approving each chef and manager. “I personally choose and approve the chef and managers of individual operations. They look at the menu of every operation and proper readiness and service,” ensuring consistent quality and service across all locations.
