The Michelin Guide is expanding its presence in Mexico for its 2026 edition, adding three new states to its evaluation territory: Jalisco, Puebla, and Yucatán. This brings the total number of evaluated regions in the country from six to nine, reflecting growing recognition of Mexico’s diverse regional cuisines beyond the initial launch in 2024.

The newly included states join Mexico City, Oaxaca, Baja California, Baja California Sur, Quintana Roo, and Nuevo León, which were already part of the guide’s selection. According to the Michelin Guide’s latest announcement, this expansion underscores the increasing attention given to local gastronomic traditions and the evolution of culinary scenes across the country.

The integration of Jalisco, Puebla, and Yucatán reflects both the strength of their culinary traditions and the recent evolution of their gastronomic scenes.

The Michelin Guide

In Jalisco, regional dishes such as birria, carne en su jugo, and torta ahogada remain central to the local identity, while contemporary restaurants in Guadalajara are reinterpreting traditional ingredients and techniques. Puebla is highlighted for its renowned culinary heritage, particularly its complex moles and historic foodways rooted in central Mexico. Yucatán’s inclusion recognizes its distinctive Mayan-influenced cuisine, featuring ingredients like achiote, sour orange, and habanero chiles, alongside coastal seafood preparations.

The 2026 edition continues to spotlight Mexico City’s high-end dining scene, where more than 180 restaurants were recognized in the most recent selection. Among them, 21 establishments received a Michelin star, including two two-star restaurants: Pujol and Quintonil, both located in the capital. These accolades affirm the city’s status as a leading destination for innovative Mexican cuisine.

The guide also maintains its Bib Gourmand distinction, which honors restaurants offering exceptional value for money, and includes a list of recommended establishments. This range of recognitions reflects the guide’s aim to celebrate both fine dining and accessible culinary experiences that showcase the richness of Mexican food culture.

The expansion follows a period of increased global interest in Mexican gastronomy, driven by the international success of its chefs and the growing appreciation for regional diversity.
