We’re sharing two fantastic⁤ options – a vibrant Prawn & Broccoli⁢ Stir-fry‌ and flavourful ⁣Spicy Greek-style meatballs. Both are packed with⁤ goodness⁣ and won’t keep you⁤ in the kitchen all day. Let’s dive in!

Prawn & Broccoli Stir-fry‌ – ‌A Rapid & Nutritious Meal

This stir-fry is a fantastic way to get your ⁣protein and veggies in one go. It’s light, ​fresh, and incredibly easy to customize. Perfect for⁤ a busy‍ weeknight!

Serves: 2
Prep time: 5 minutes
Cook time: 10‍ minutes

Ingredients:

200g ⁤prawns, peeled and deveined
1 head of broccoli, cut into florets
1 red pepper, sliced
⁣ 2 tbsp water
Salt and ‌pepper to taste
​ 1 tbsp lemon juice
2 tbsp chopped fresh parsley
​Cauliflower rice, to serve

Instructions:

  1. heat a large frying pan or wok over medium heat. add a little oil and sauté⁤ the garlic until softened.
  2. Add the broccoli, pepper, and water. Season with salt and pepper. ⁤Cover and cook for two to three minutes until the vegetables are tender.
  3. Increase heat to medium-high.⁢ Add the prawns and season with salt and pepper. cook​ for three to four minutes until the prawns​ are cooked through – you’ll know they’re ready when‌ they turn pink and⁤ opaque.
  4. Stir in the lemon ​juice and parsley. ⁢Serve immediately over cauliflower rice for a complete⁤ and satisfying‍ meal.

Why we love it: This recipe‍ is⁤ a winner ‍because it’s so versatile. Feel free ‌to swap out the broccoli and pepper for ‍your favorite vegetables. Snap peas,carrots,or mushrooms⁤ would all work⁤ beautifully. Plus, using cauliflower ​rice​ keeps things light and low-carb!

Spicy Greek-style Meatballs – A Flavourful delight

Thes meatballs are‌ bursting with Mediterranean flavours!⁢ The blend of spices creates a warm and ​inviting aroma, and​ they’re ‌surprisingly easy to make.

Serves: ⁣4
Prep ⁣time: 10 ​minutes
Cook time: ⁣ 15-20 minutes

Ingredients:

600g ground lamb
15g coriander, finely ⁣chopped
‌1 tsp cumin
1 tsp turmeric
⁤ ​ 1‍ tsp paprika
1 tsp coriander (ground)
⁢ ​ ½ tsp cinnamon
​ ½ tsp cayenne pepper (adjust to your spice preference!)
½ tsp sea ⁣salt
1⁢ tbsp extra-virgin olive oil

Instructions:

  1. In a mixing bowl, ⁣combine the ground lamb, coriander, cumin, turmeric,‍ paprika,​ ground coriander, cinnamon, cayenne‍ pepper, and sea​ salt. Get your hands in ⁣there and really ‍mix everything together well.Roll the mixture into approximately 1.5-inch balls.
  2. Heat the olive oil in a large frying pan over medium heat. Add the meatballs⁣ to the pan, ensuring not to overcrowd it. Cook for six‌ to eight minutes, turning frequently to brown all⁢ sides. Flip the ⁢meatballs and continue to⁤ cook for another six to eight minutes, or until they are cooked through and no longer pink​ inside.
  3. Serve these delicious meatballs‍ with your favourite vegetables or a fresh side⁣ salad. A⁤ dollop of Greek yogurt adds a lovely cooling touch!

Spice it‌ up (or down!): Don’t be afraid ‌to adjust the amount⁢ of cayenne pepper to suit your taste. If you prefer a milder flavor, start ​with ⁤¼ tsp and add more if needed. For a real kick, ⁢you could even⁣ add ⁤a⁢ pinch of chilli flakes!
