New Plant-Based Brunch Spot FIKA Opening in Grand Rapids’ Creston Neighborhood
FIKA, a new plant-based and gluten-free restaurant, will open in Grand Rapids’ Creston neighborhood in spring 2025. The restaurant will be located on Plainfield Avenue, occupying a 3,095-square-foot space on the ground floor of the Lofts on Grove apartments at 1359 Plainfield Ave. NE.
Owners Becca and Nick Van Liere also own Rise Authentic Baking Co. on Fulton Street. FIKA will serve breakfast and lunch, offering items like pancakes, chik’n and waffles, fresh salads, and sandwiches. A small market will feature deli items and packaged goods, along with coffee, tea, and espresso made with Squibb Coffee.
The Lofts on Grove is a four-story mixed-use apartment building with 110 market-rate apartments above the retail space. Rent for the apartments ranges from $1,185 to $2,300.

Interview with Nick Van Liere: The Vision Behind FIKA, Grand Rapids’ New Plant-Based and Gluten-Free Haven
News Directory 3:
Nick, congratulations on the upcoming opening of FIKA! Can you tell us what inspired you to create a plant-based and gluten-free restaurant in the Creston neighborhood?
Nick Van Liere:
Thank you! The inspiration came from our experience with Rise Authentic Baking Co. We’ve seen a growing demand for healthy dining options, particularly among those who are plant-based or have dietary restrictions. We realized there was an opportunity to cater to this need in the Creston community, which has been incredibly supportive of local businesses.
ND3:
What can your customers expect from the menu at FIKA?
NVL:
Our menu will focus on inclusive comfort food. We’ll serve breakfast and lunch items like pancakes, chik’n and waffles, fresh salads, and various sandwiches. Each dish is designed to be flavorful and satisfying without compromising on dietary choices. We also want to emphasize the fresh, locally sourced ingredients we’ll be using.
ND3:
The name “FIKA” has a special meaning. Can you share the significance behind it?
NVL:
Absolutely. “FIKA” is a Swedish tradition that represents a coffee break with friends, family, or colleagues. It’s all about taking a moment to connect and enjoy each other’s company over a warm beverage or a light meal. We want FIKA to be that kind of space—a welcoming environment where people can gather, relax, and enjoy healthy food together.
ND3:
FIKA will also feature a small market. How does that fit into your overall vision for the restaurant?
NVL:
The market will complement our dining experience by offering deli items and packaged goods for those who want to take something home. We will also serve coffee, tea, and espresso made with Squibb Coffee, which aligns perfectly with our mission of promoting a community-oriented atmosphere. It’s about providing convenience alongside quality food.
ND3:
What excites you most about joining the Creston community with FIKA?
NVL:
The community’s support has been tremendous, especially with our existing business on Fulton Street. We believe FIKA will provide residents with healthy dining options that are currently lacking in the area. The feedback we’ve received so far is encouraging, and we can’t wait to contribute to the local food scene.
ND3:
FIKA is located in the Lofts on Grove. What do you think this location adds to your restaurant’s appeal?
NVL:
Being in a mixed-use building like the Lofts on Grove allows us to tap into a diverse clientele, from residents and renters to people visiting the area. It makes us accessible to many potential customers. Plus, we love the idea of being part of a vibrant community space where people can enjoy dining right at their doorstep.
ND3:
Any final thoughts you’d like to share with our readers?
NVL:
We are thrilled to be opening FIKA in Spring 2025 and look forward to welcoming everyone to our new space. We want to create a restaurant where everyone feels welcome, and we can’t wait to share our passion for plant-based and gluten-free cuisine. Thank you for your support!
