Pipsqueak Bagels is opening its first brick-and-mortar location in Southeast Portland, transitioning from a popular pop-up operation to a permanent storefront. The new shop is located at 3844 SE Gladstone Street, situated near Cesar Chavez Boulevard.

The business first launched in 2024 as a pop-up and quickly developed a following in the local community, frequently selling out its inventory within hours. Prior to establishing this permanent address, the staff sold bagels online and maintained a winter residency at Puff Coffee, located at 2816 SE Stark Street, where they served bagels and sandwiches every Saturday.

Production and Offerings

The shop specializes in East Coast-style bagels. Co-owner and baker Madilyn Gibbons stated that every bagel is hand-rolled using a classic East Coast method, followed by boiling and baking fresh throughout the day.

Production and Offerings

Customers can expect a menu featuring fresh, hot bagels, classic toppings, and homemade cream cheese. The shop also offers sandwiches, including an Italian Stallion option featuring salami.

Location and Community Integration

The new storefront occupies the former Flower Bloom space. The building is shared with PDX Ramen & Whiskey and is located across the street from Carlos Birrieria Cesar Chavez Mexican restaurant.

Beyond its storefront and residency, Pipsqueak Bagels has been involved in local community events, including the Milwaukie Farmers Market. Gibbons has identified community building and bringing traditionally made bagels to Portland as primary goals for the new brick-and-mortar location.

The space is designed to be a welcoming environment intended to bring people together, supported by the growth the business experienced during its time as a pop-up and farmers market favorite.
