Riccardo Giraudi: Turning Kobe Beef into Bolognese in St. Moritz

In the upscale alpine resort of St. Moritz, a new culinary sensation is heating up the gourmet scene: the Beefbar, the brainchild of globetrotting entrepreneur and meat maestro, Riccardo Giraudi. This luxury fast-food concept is causing a stir, with top locations vying to host Giraudi’s latest venture, while he dreams of perfecting a wood-fired pizza vending machine.

Giraudi, 48, a Monaco resident with a global meat empire under his belt, has always harbored an entrepreneurial spirit. At the tender age of 11, he supplied American sweets to his classmates in Nizza, ultimately driving a local French confectionery out of business. His love for the meat trade developed later, inspired by a desire to transform his family’s business into a formidable brand, rather than a mere commodity.

His foray into gastronomy began serendipitously, driven by a need to showcase his premium meats. With no formal culinary background, Giraudi nonetheless succeeded in creating a unique culinary experience, blending high-quality, often exotic meats with unconventional presentation, like Japanese Kobe and Australian Wagyu Beef in gyozas, tacos, or even a luxurious bolognese.

Beefbar’s success has been meteoric, with 30 outlets worldwide drawing international jet-setters from Kuwait to Moscow to Mykonos. Yet, Giraudi remains humble, acknowledging that even his perfect burger pales in comparison to the timeless Big Mac. Now, he’s setting his sights on Switzerland, with St. Mortiz’s Grace La Margna hosting his first foray into the German-speaking world.

Despite his international expansion, Giraudi remains critical of Swiss beef, citing inconsistency in quality due to the plethora of small producers and various breeds. Instead, he praises Schaffhauser firm Luma Beef for their exceptional dry-aging techniques, securing a supply contract for his entire network.

Giraudi’s passion for innovation extends beyond the kitchen. A fast-food enthusiast, he plans to unveil a wood-fired pizza vending machine, the Pizz’aria, in Monaco this February, with Swiss and French rollouts slated for summer. And in true Giraudi fashion, this isn’t just any vending machine; it’s a sleek, stylish contraption befitting the man who turned Kobe Beef into a haute cuisine sensation.

But Giraudi isn’t all business. He’s also a proud husband, having met and later married renowned architect Emil Humbert while their shared client, a starchitect, preferred Humbert’s designs. Together, they’ve created signature "warm glamour" spaces for various high-end brands worldwide.

With his unyielding drive, Giraudi continues to redefine the boundaries of luxury dining, one extraordinary meal at a time. And who knows? Perhaps the next big trend in gourmet street food will emerge from this prolific culinary innovator’s mind – or perhaps his entourage will simply enjoy another Big Mac.

Riccardo Giraudi’s Beefbar isn’t just serving premium beef; it’s serving a vision. A vision of elevated fast-food, of culinary innovation, ⁣and of pushing boundaries. His unwavering passion for meat, coupled with his entrepreneurial drive, has created a culinary phenomenon⁣ that’s capturing the hearts (and stomachs) of discerning diners worldwide. From the slopes of St. Moritz to the bustling streets of global metropolises, Giraudi’s ambition knows no bounds.⁣ As he continues to explore new frontiers, one thing is certain: Riccardo Giraudi is a culinary innovator who will continue to redefine the landscape of fine dining, one perfectly seared steak at a time.
