This is a refreshing, fragrant herbal tea-based soup with the sweetness of the celery and carrots.
Ingredients
For 2 people

Carrots
Peel the carrots and cut them into 1cm cubes
Quantity: 1/2 piece

Celery
Remove the celery strings and cut into 1cm cubes
Quantity: 1 piece

Celery leaves
Chopped
Quantity: Appropriate amount

Ginger
Grate ginger
Quantity: 1/4 serving

Olive oil
Quantity: 2 teaspoons

Herbal tea (mint/tea bag)
Quantity: 1 bag
Instructions
Step 1: Add the herbal tea to hot water (not included in the recipe/200ml) and leave it as instructed on the packet.
Step 2: Put olive oil in a pot and heat on medium heat. Add the carrots and celery, sprinkle with a little salt (not included in the recipe) and sauté for about 3 minutes.
Step 3: Add water and celery leaves to (2), bring to a boil, then reduce heat to medium-low, add (1) and simmer for 3 minutes.
Step 4: Remove the celery leaves, add salt and ginger and simmer briefly.
