Hudson Valley Restaurant Gains National Recognition

Via Cassia, an Italian restaurant in Hudson, New York, has been recognized as one of the best new restaurants in the United States. The restaurant, which opened on Warren Street on March 14, 2024, was ranked number four in a recent poll released by USA Today, according to reports.

Via Cassia is the creation of Chef Gaetano Arnone, who brings extensive experience from the New York City culinary scene. Arnone previously served as Chef de Cuisine at Babbo and as Executive Chef at Otto, a high-end pizzeria that closed in 2020. His background also includes work at Dickson’s Farmstand Meats and Salumeria Rosi, and a role helping to open the first Eataly in the city.

Prior to opening Via Cassia, Arnone and his wife, Meigan Arnone, spent four years in Tuscany, Italy, working with the Corsini family at Villa Le Corti. This experience significantly influenced the restaurant’s approach to Italian cuisine. Arnone also studied with master butcher Dario Cecchini while in Tuscany.

The restaurant occupies the former site of Ca’Mea Restaurant, a beloved Hudson establishment that closed at the start of 2024. Via Cassia aims to continue and elevate the tradition of Italian cuisine that Ca’Mea established over two decades, offering an authentic taste of Italy without the expense of travel.

Via Cassia focuses on fresh, filled, and extruded pastas made in-house, complemented by seasonal appetizers and entrees. The restaurant also features an all-Italian wine list, alongside local spirits and beers, reflecting Chef Arnone’s passion for both Italy and the Hudson Valley.

The restaurant’s atmosphere is described as a traditional Italian trattoria – a simple dining room with homemade pasta, great wine, and genuine hospitality.

As of January 2026, Via Cassia is open Wednesday through Sunday from 5:00 PM to 9:00 PM, and is closed on Mondays and Tuesdays. The restaurant offers take-out and delivery options. It has an estimated health score of 98 out of 100.

Via Cassia notes on its Yelp page that it does not automatically provide a dessert for birthdays, but arrangements can be made in advance.
