Sensei Guide Danielle Hildreth, who works as a registered dietitian and certified holistic nutritionist, points out that a major advantage of utilizing a CGM is its ability to deliver a continuous, real-time picture of how the body reacts all day long rather than supplying just a single isolated measurement.

Physical Activity and Glucose Response
During program evaluations, participants tracked how physical activity influenced their blood sugar readings. In one reported instance, after eating a homemade granola bar and a large cup of coffee with milk, a participant embarked on a two-hour hike up and down Koloiki Ridge, a 4.9-mile trail with panoramic views. Despite the strenuous climb, glucose levels remained relatively stable rather than showing a major spike. Hildreth notes that a stable rise in blood sugar during exercise is a normal response to prolonged physical activity fueled by carbohydrates like granola, which break down into readily available energy. During exercise involving higher-intensity periods or elevation gain, the body increases energy demands and utilizes a combination of fuel sources, including glucose and stored glycogen. As exercise intensity shifts, the body may release stored glucose into the bloodstream to ensure muscles have adequate fuel.

Dietary Impacts and Nutritional Variations
Meal composition plays a significant role in how glucose enters the bloodstream, as observed during the retreat’s nutritional sessions. Eating mushroom toast with a poached egg and an iced matcha latte resulted in a more significant glucose spike that returned to baseline within about an hour, while an afternoon dip in warm onsen pools also caused a minor rise attributed to external stress on the body. Subsequent meals tracked at home revealed varying responses depending on macronutrient balances. Eating a California roll caused glucose to rise fairly quickly and cross the 140 mg/dL threshold, whereas a dinner of steak fajitas with vegetables, rice, and beans saw glucose rise to about 123 mg/dL before declining within an hour. According to Hildreth, steak fajitas contain fiber from sautéed vegetables and protein from the steak that help slow digestion, while California rolls rely primarily on white rice, which is more processed, lower in fiber, and digested more quickly. Similarly, a chicken, sweet potato, and avocado bowl provides a stable blood sugar response because sweet potatoes offer whole-food carbohydrates with fiber and avocados contribute healthy fats that slow digestion, as outlined by program guidance.
