For generations, communities across the Balkans and Turkey have utilized ants to initiate the yogurt-making process. This practice, largely forgotten in modern times, involves placing ants - specifically, ants from the Formica genus – into milk. The ants’ natural microbial communities then begin the fermentation process, ultimately yielding yogurt.
“Today’s yogurts are typically made with just two bacterial strains,” explains Leonie Jahn, senior author of the study and researcher at the Technical University of Denmark.”But traditionally, people used a whole ecosystem of microbes to ferment milk, and ants were a key part of that.”
The research team, led by Jahn and co-author Sinotte, sought to understand the scientific basis behind this ancient practice. They collected ants from various locations and analyzed their microbial composition, discovering a diverse range of bacteria, including lactic acid bacteria crucial for yogurt production.

The team’s analysis revealed that ants possess a unique combination of bacteria, acids, and enzymes that effectively kickstart fermentation. The lactic acid bacteria present in ants are similar to those used in commercial yogurt production, but the ant-derived microbes offer a broader spectrum of activity.
However, the researchers also acknowledge potential safety concerns. Live ants can harbor parasites, and improper handling – such as freezing or dehydrating – can create conditions for harmful bacteria to proliferate. Thus, the study emphasizes the importance of careful sourcing and preparation when considering ant-based fermentation.
From Tradition to Table: A Michelin-Starred Collaboration
To explore the culinary possibilities of ant yogurt,the researchers collaborated with chefs at Alchemist,a two-Michelin-starred restaurant in Copenhagen,Denmark.The chefs developed a series of innovative dishes inspired by the ancient recipe,showcasing the unique flavour profile and texture of ant-infused yogurt.
Guests were served creations such as yogurt ice-cream sandwiches shaped like ants, mascarpone-like cheeses with a distinctive tangy flavor, and cocktails clarified using a milk wash technique – all incorporating ant yogurt as a central ingredient.

Sinotte adds, “I hope people recognize the importance of community and maybe listen a little closer when their grandmother shares a recipe or memory that seems unusual. Learning from these practices and creating space for biocultural heritage in our foodways is critically important.”
