A Historic Swiss Restaurant Reopens After Extensive Renovation
The Moulin d’Assens, a landmark restaurant in the Vaud countryside of Switzerland, has reopened its doors on , following a comprehensive renovation. The reopening marks a new chapter for the establishment, which was once renowned for its rotisserie, while preserving the building’s original character.
For nearly two decades, the Moulin d’Assens was a popular destination under the ownership of Alain and Daniela Laval, celebrated for its grilled meats cooked over an open fire. After their retirement, the restaurant closed and fell into disrepair. According to reports, the building required substantial work before it could be brought back to life.
Corinne von Känel Miranda spearheaded the renovation project, recognizing the restaurant’s potential after living in Assens for twenty years. “I knew the restaurant, as I have lived in Assens for twenty years. When I learned that it was for sale, I thought, now or never,” she reportedly said.
The current chefs, Claryce Monnier and Alexandre Lacoste, bring a fresh perspective to the Moulin d’Assens. The pair met while working in the kitchens of Philippe Chevrier and honed their skills over three years at the Maison Décotterd in Glion. They are now parents to an eight-month-old child and are eager to lead the newly renovated kitchen.
The restaurant’s menu focuses on locally sourced ingredients and traditional cooking techniques, with a modern twist. The menu includes a midday offering and a full à la carte selection. For groups of six to fourteen diners, the Moulin d’Assens offers whole pieces of meat cooked over a wood fire, tailored to the season and the preferences of the guests.
The restaurant also offers a special “table d’hôte” experience, suitable for family gatherings, celebrations, or friendly dinners. Reservations are required for this option to ensure a personalized experience.
The reopening of the Moulin d’Assens has already garnered attention, earning it the “coup de cœur” (heartthrob) designation from GaultMillau, a respected restaurant guide. The guide praised the restaurant’s “intimate” atmosphere and the quality of the cuisine.
The Moulin d’Assens is open from Wednesday to Saturday for lunch starting at 12:00 PM and dinner starting at 7:00 PM. It is also open for lunch on Sundays from 12:00 PM. The restaurant is closed on Sundays evenings, Mondays, and Tuesdays.
