GRAMAT, France (AP) — After more than two decades, the Butcher-tractor of the Halle in Gramat has a new team at the helm. Didier Mazet and Alain Despeyroux, who took over the establishment in July 1997, have passed the torch to Vincent Deshayes, his son Alexandre, Nicolas de Oliveira, and David Garcia, as of April 15.
A Global Journey Leads to Local Butchery
The new management team brings a wealth of diverse experience to the local institution. vincent and Alexandre Deshayes have spent years working in the United States, Brazil, Great Britain, and Paris before deciding to settle in the Lot region.
Alexandre Deshayes, 22, represents the third generation of butchers in his family. “When I succeeded my father in Paris, I was the same age as Alexandre is now,” said Vincent Deshayes.
Vincent Deshayes noted the family’s international experience.”We seized this opportunity to take over in Gramat, an establishment that is a real local institution,” he said. “we will continue the work of Cécile, Didier, and Alain, both in the butcher shop and with prepared dishes. We also plan to innovate with grilled products and barbecue.”
The butcher shop will continue to offer high-quality products, including Quercy calf, Limousin Rouge label beef, and farmer’s lamb from the OC countries, according to Deshayes.
Experienced Staff Joins the Team
Nicolas de Oliveira, an employee of Alexandre and Vincent, brings 20 years of experience from a Parisian butcher shop, along with several years spent in Brazil and the Manche department. David Garcia,originally from Annecy,has about 30 years of experience acquired primarily in the North department.
“We are ready and enthusiastic about this new professional adventure here in Gramat with vincent and Alexandre,” de Oliveira and Garcia said.
Notably, given the new owners’ and staff’s time spent abroad, customers can place orders in English, Portuguese, and Spanish.
Vincent Deshayes recounted a recent interaction: “Just yesterday, we had a British client who was surprised and happy to chat with us in english!”
