Recipe: Air Fryer Devilled Chicken Wings
Serves: 4
Ingredients:
- 1 kg chicken wings
- 75 g honey
- 1-3 tbsp Calabrian chilli paste (to taste)
- 1½ tsp red wine vinegar
- 1 tbsp tomato purée
- 1 tbsp olive oil
- 1 tsp garlic powder
- 40 g rice flour or cornflour
- 1 tsp sweet smoked paprika
- 50 g ’Nduja
- 150 g mascarpone or Dolcelatte
- Salt and freshly ground black pepper
Method:
- Place the chicken wings in a colander. Mix in 1 tsp of salt and let them dry for 15 minutes.
- In a large bowl, combine honey, chilli paste, vinegar, tomato purée, and oil. Whisk and set it aside.
- Preheat your air fryer to 190°C for 3 minutes.
- In another bowl, mix garlic powder, flour, paprika, and ½ tsp pepper. Add the chicken wings and coat them evenly. Combine with about ¾ of the honey marinade. Cook in the air fryer for 10 minutes. Turn the wings and cook for an additional 8 minutes until cooked through.
- Mix the ’Nduja with the remaining marinade. Drizzle it over the wings and cook for 1-2 more minutes to melt. Serve with mascarpone or Dolcelatte, along with a cold beer or a glass of red wine.
