One Pot Pasta with Zucchini and Lemon
This one pot dish is a perfect blend of flavors and textures, sure to satisfy even the most discerning palates.
Ingredients:
- 100g zucchini
- 100g linguine
- 2 cloves of garlic
- 50g Parmesan cheese
- Juice of 1 lemon
- 1 teaspoon chopped fresh basil
- Salt and pepper to taste
- Olive oil
- 300ml vegetable stock
Preparation:
- Cook the linguine in boiling salted water until half done.
- Briefly fry zucchini cut into noodles in olive oil.
- Add garlic, salt, pepper, vegetable stock, lemon juice, and cooked linguine. Cook in the sauce until the thickness is optimal and the pasta is done al dente.
- Stir in Parmesan cheese and chopped basil. Serve hot and enjoy!
