Maitake Mushrooms: A Delicious Autumn Treat

This dish can be enjoyed as a side dish or as a snack with alcohol.

Maitake Mushrooms and Cheese Wrapped in Seaweed and Deep-Fried

Maitake mushrooms are great when deep-fried, but when wrapped in nori seaweed with cheese they’re incredibly tasty. The combination of seaweed and cheese is a perfect match, and adding white dashi to the batter enhances the flavor.

Ingredients (for 2 people)

  • 1 pack of Maitake mushrooms (Yukiguni Maitake Kiwami)
  • 2 slices of cheese
  • 2 sheets of roasted seaweed
  • Cake flour (as needed)
  • Salad oil (as needed)
  • 1 tablespoon potato starch
  • 2 tablespoons plain flour
  • 3 tablespoons cold water
  • 1 tablespoon mayonnaise
  • 1/2 teaspoon white dashi

How to Make

  1. Cut the sliced cheese and roasted seaweed in half.
  2. Tear the maitake mushrooms into 4 equal parts by hand.
  3. Place sliced cheese and maitake mushrooms on the roasted seaweed, then roll it up from the front to back, seal the seam with a toothpick, and sprinkle with flour.
  4. Mix the batter with the ingredients and coat it evenly.
  5. Pour salad oil into a frying pan to a height of about 1.5 cm and heat to 160 degrees. Deep fry for about 2 minutes, then turn it over and deep fry for another 2 minutes or so until crispy.
  6. Place on a deep frying tray and leave for about 5 minutes, then remove the toothpicks and serve on a plate.
