New Orleans⁤ Jazz Fest Kicks Off, ⁢Serving Up Music and Culinary Delights

NEW ORLEANS (AP) — The New​ Orleans Jazz and Heritage festival‌ began Thursday, promising two weeks of music and food deeply rooted in the city’s culture.

Since its inception in 1970, the festival has⁢ grown from⁣ a local tribute to jazz, blues, gospel, folk, ​and Cajun zydeco into a major ⁣event drawing⁤ hundreds of thousands. While headliners like Pearl Jam, ⁤Lenny Kravitz, and Lil Wayne attract diverse audiences, the festival remains dedicated to showcasing New Orleans artists and traditions.

“We started out to reflect New Orleans to the world, but now it’s just as​ much a part of New ‍Orleans as Mardi gras,” said Quint Davis, the festival’s longtime producer.

For many, the music provides a backdrop to exploring ‍the⁤ festival’s renowned⁤ Cajun and Creole cuisine. Local vendors ⁣serve dishes ranging from pheasant,‌ quail, and andouille gumbo to pecan catfish meunière and alligator sausage.

Michelle Nugent, the festival’s food‍ director,‌ said that most of the nearly 70 ⁣vendors have participated​ for decades, “perfecting their craft.”

“The menu we feature you can’t find anywhere‍ else,” Nugent said. “Everything is handmade and ‌home-cooked.”

Robert Harrison III continues his mother’s legacy at Loretta’s Pralines, offering chocolate, rum, and coconut pralines, along with the popular praline beignet.

“The praline ⁢beignet — my mom was a genius for this: she took two New Orleans products ⁢that were just so French and she⁤ mashed them together,” Harrison III said. He added⁢ that his staff spent⁣ weeks preparing thousands of pralines for the festival.

Walker’s Southern Style BBQ offers another festival favorite: the Cochon de Lait⁤ Po Boy, featuring ⁢slow-roasted ‌suckling pig on French bread.

“We dry rub all those pork butts ‍every night and they smoke all night​ long,” ‍said Shayne Brunet, whose family has operated a stall at the festival for more than ⁢20 years. Fresh coleslaw and the family’s secret “wertie” sauce, described as “Creole‌ creamy,” complete the sandwich.

John Caluda, a local baker, is known‌ for his crawfish strudel, a savory pastry that has become a festival staple.⁢ “One thing you won’t find ther is burgers,hot‍ dogs,pizza,French ⁣fries,any of​ the normal⁢ food that you can get any other festival type of place,” Caluda said.

The ⁢crawfish​ strudel joins Chef Pierre Hilzim’s “Crawfish Monica” – a creamy ⁢pasta dish with crawfish –‌ as a festival‍ original. Hilzim estimates he needs nearly 2 million ‍crawfish to meet demand.

“To be able to⁣ put a dish in the ⁢lexicon of food in this city — I’m very humbled by that,” Hilzim said. “I don’t ⁢think anywhere in the‍ world is eating better food.”

This year’s headliners include Pearl Jam, ⁣Lenny Kravitz, Dave Matthews Band, Luke Combs, Kacey​ Musgraves, Santana, Burna Boy, Lil Wayne, and The Roots.
