Shimokuni Shin’s Wake-Up Meal: Sauce Mayo Rakkyo’s Recipe

The first champion of the “CHEF-1 Grand Prix” program, French chef Shimokuni, teamed up with Ichimonni! in a corner called “Shimokuni Shin’s Wake-Up Meal.” This recipe combines techniques unique to French chefs with simple adjustments to “awaken” both you and your cooking.

Sauce Mayo Rakkyo’s Recipe

Ingredients (serves 4)

  • 1 egg
  • 6 scallions
  • 20g dipping sauce for scallions
  • 1/2 slice of salmon
  • 5g grain mustard
  • 80g salad oil
  • Pinch of salt
  • 5g soy sauce

Instructions

  1. Crack the egg and take only the yolk.
  2. Add salt, mustard seeds, and dipping sauce from the shallots and mix with the egg yolk.
  3. Add salad oil little by little and mix.
  4. Dice the shallots and mix into the sauce.
  5. Sprinkle salt on both sides of the salmon.
  6. Add olive oil to a frying pan and heat over medium heat.
  7. Thoroughly grill the salmon on both sides.
  8. Roughly chop the salmon skin and add it to the sauce.
  9. Cut the salmon into bite-sized pieces and add to the sauce.
  10. Add soy sauce and mix.
