She also highlighted the potential risks of vitamin A toxicity and gastrointestinal problems associated with overconsumption of carrots and other vegetables rich in beta-carotene.

It is important to note that a single cup of raw, chopped carrots provides approximately 430% of the recommended daily intake of vitamin A. Therefore, moderation is crucial to avoid adverse effects.

Interest in ‘carotenemia’ is growing after the story of a woman in Scotland who ate more than 10 carrots every day turned her skin orange.
