Dietary Factors Influencing Diabetes: Insights from Tufts University Study

The prevalence of diabetes is increasing worldwide. Diet management and exercise are very important for diabetic patients, and diet management in particular is a lifelong task. Tufts University in the United States announced the dietary factors that influence diabetes.

Researchers at Tufts University integrated changes in diet and the distribution of diabetes in 184 countries from 1990 to 2018 and analyzed 11 dietary factors. As a result, the number of patients with new-onset type 2 diabetes in 2018 was over 14.1 million, and 70.3% of them were estimated to be due to poor eating habits. In particular, dietary habits such as insufficient intake of whole grains, excessive intake of refined carbohydrates, and excessive consumption of processed meat have been found to be major causes of type 2 diabetes. On the other hand, dietary habits such as excessive consumption of fruit juices or low consumption of vegetables and nuts did not have a significant effect. The results of this study were published in the international academic journal “Nature Medicine”.

To manage your eating habits, you need to understand the types of carbohydrates. Carbohydrates can be broadly divided into simple carbohydrates and complex carbohydrates. Simple carbohydrates raise blood sugar levels quickly because the sugar molecules are small and the digestion and absorption process is fast. On the other hand, complex carbohydrates have large molecules and are connected like a chain, so they go through the process of breaking down into simple carbohydrates once. Because of this, the digestion and absorption process is slower than that of simple carbohydrates and slowly raises blood sugar levels. Representative complex carbohydrate foods include whole grains, beans, vegetables, sweet potatoes, and potatoes.

Therefore, when consuming carbohydrates, it is best to consume complex carbohydrates as much as possible. Additionally, eating it with fat or fiber can further slow digestion. It’s also a good idea to eat rice or bread with vegetables or drizzle it with a good oil like olive oil.
