A recent study published in The Journal of Nutrition found that when you eat salmon, you consume at least 30 metabolites, which are substances produced during digestion and other chemical processes. Four of these metabolites have been associated with significant improvements in cardiovascular health.

Researchers at the University of Colorado asked 41 participants between the ages of 30 and 69 to eat a Mediterranean diet that included a variety of fish, lean meats, whole grains, fruits and vegetables. They then took blood tests and other tests to assess how healthy their cardiovascular systems were. The diet involved eating salmon twice a week for five weeks, with a month’s break in between. The participants were obese or overweight but did not have an active metabolic disease such as type 2 diabetes. Food samples provided to the participants were also analyzed in the laboratory to identify metabolites.

The researchers discovered a total of 1,518 compounds in foods, of which 508 were unique to salmon. Specifically, increases in two compounds and two other metabolites found in salmon were associated with a reduction in total cholesterol, bad cholesterol and other fats in the blood. Bad cholesterol is a fatty substance that builds up in blood vessels, damaging them and dramatically increasing the risk of stroke and heart attack.

The researchers said: “We were the first to identify salmon-specific bioactive compounds that increased in plasma after consuming a Mediterranean diet containing salmon. “Additionally, some of these food-specific compounds have been associated with short-term improvements in indicators of cardiometabolic health.”
